Pumpkin Muffins!! Delicious!!

As always I am on a quest to look for healthy yet Delicious food - particularly breakfast and snack food. I usually consume most of my calories from the two. So, I came across a great recipe for "healthy" Pumpkin muffins but I still felt as if they had a little too many calories and sugar. I changed up the recipe a little and here is what I came up with.......


OK - so they might not look the best or taste exactly like the really sugary, fatty ones, but these Pumpkin Muffins were great and only 129 calories each with 3.4 grams of protein!! I'll attach all of the nutritional info at the bottom.

Recipe:
1 1/2 cups whole wheat flour
1 1/2 cups old fashioned oats
1/2 cup brown sugar
1/2 cup natural applesauce
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
1 15oz can pure pumpkin
3 tbsp extra virgin olive oil
1 whole egg
1 egg white only
1/4 cup low fat milk
4 chopped squares of Lindt 85% Dark Chocolate (or use whatever brand)

Preheat oven to 375*
Whisk dry ingredients and spices together, then add remaining ingredients as well. Leave the dark chocolate bits to add last.
Either grease your muffin tins or use liners.
Bake 18-22 mins
Makes 18 muffins (small/medium size)
