| Chicken Gnocchi Soup |
Recipe
2 Chicken Breast
2 Cups Chicken Broth/Stock
Slow cook in crock pot for 3 hours
After about 2 1/2 hours cooking in crock pot start your soup base:
1/2 Stick Salted Butter
4 tbsp Olive Oil
1/2 Onion
1 Garlic Clove Diced
2 Carrots Shredded
3 tbsp Parsley
2 tbsp Flour
2 Cups of half and half or whole milk
Saute butter, olive oil, onion, garlic, parsley and carrots together until onions become tender then add your half/half or milk continue to cook and stir for a few mins, then slowly add your flour. This mixture should start to thicken like a rue. Cook for 5- 10 mins more. Add mixture to the crock pot.
Once you get the rue and chicken together add:
2 Cups Fresh Spinach
1 Cup Chicken Broth/Stock
1 pound Potato Gnocchi
Let cook in crock pot for another hour or until you see the gnocchi start to rise and become tender.
Add salt and pepper to taste, then enjoy!!!
